Shrimp Tostadas

This is one of my favorite recipes that I love to make.  They are shrimp tostadas.  The reason I love shrimp tostadas is because they are simple to put together and everyone likes to eat them.  We made it Saturday. It is a Mexican dish and it’s really light and refreshing.  It has an amazing spicy kick so beware of the heat level.  That’s okay though because you can modify that part of the recipe.

Ingredients You will need:

cilantro, 1 small package of cooked and peeled shrimp, 1 large white or yellow onion, 1 large tomato, 3 large jalapenos, 2 habanero peppers, 2-limes, mayonnaise, tostadas, 1/2 teaspoon salt

How to make Shrimp Tostadas

Simple shrimp tostadas

1. Dice all your jalapenos and habanero peppers, onion, and tomato, and cilantro and toss in a large bowl

2. Cut limes into halves and squeeze over mixture, add salt.

3.  Rinse off shrimp and clip off the tails.

4.  Spread mayonnaise over tostadas

5.  Spread mixture of vegetables over tostadas

6. Top each one off with 4-6 shrimp

7. Serve and enjoy!

Today I saw an article in a magazine on Jessica Simpson’s weight loss.  We all know Jessica Simpson just had another baby and she really struggled with her weight after having her first baby.  I believe her ending weight was 210 at her heaviest and then she lost the weight only to announce she would be gaining it all back with a new bundle of joy on the way.  This time during her pregnancy, Jessica didn’t gain as much weight but she still had a lot of weight at the end on her tiny frame.  So this time around Jessica Simpson was able to lose 25 pounds in 5 weeks.  Hooray for Jessica.  And to top if off she was able to eat some pretty tasty food.  The meals looked pretty delicious and healthy.

So let’s see how she did it…

Jessica Simpson was seen rockin those famous Daisy Dukes. How did she squeeze into those little shorts?  Apparently Jessica was able to fit back into those Daisy Dukes by following an extreme 2 hours of intense workouts seven days a week.  She is not starving herself to death.  As a matter of fact she is eating healthy meals on a Points system with Weight Watchers.  She also has a personal chef to assist since she is a busy mom.  She doesn’t have to worry about cooking anything for herself and she has a personal trainer, celebrity trainer, Harley Pasternak.  She has a home gym so home workouts are convenient and she practices portion control and has done away with alcohol.

Vegan Style French Onion Dip

Vegan Style French Onion Dip

This is a low fat vegetarian version of this favorite food that doesn’t have all the artificial things and high amounts of salt that are found in the instant mixes.  The flavor is all natural from oven-roasted onions, low salt soy sauce, and herbs.

Vegan Style French Onion Dip

Vegan Style French Onion Dip

A 12 ounce of low fat sour cream or vegetarian sour cream

1 medium onion that is sliced into half inch slices

1 Tablespoon of olive oil

1 Tablespoon of balsamic vinegar

one quarter ground black pepper

Half a teaspoon of dried thyme

Half a teaspoon of low sodium soy sauce

1 teaspoon of sea salt

Directions:  Preheat oven to 450 degrees and  combine oil, onion, vinegar, sea salt, and pepper on nonstick cooking sheet.    Bake for about 19 minutes or when you see the onions are browned.  Put the mixture in a medium bowl to cool.

Coarse chop the rest of the onion slices and put it back in the bowl stirring in the sour cream, soy sauce, and thyme.  Season the rest with remaining sea salt and fresh pepper.  Put in a serving bowl.  Serves about 12

You can eat this dip with whole grain crackers or tortilla chips or fresh vegetables

Serving Size: 3 Tbsp

about 50 calories, 4 grams of fat, no sat fat, 1 g carbs, 1 g fiber, 1 gram protein

How to Control Hunger

Knowing how to control hunger is key to losing weight.  Use common sense and listen to what your body is telling you.  If it tells you it’s hungry, you will feel hunger pangs of course.  When you are full, your body will also let you know.

Show your body who’s boss and that you can control the hunger. It doesn’t control you.

5 Tips on How to Control hunger and lose weight

 

Please Don’t Skip Meals.  This will slow down your metabolism.   Your body should be getting at least five feeding sessions a day.  That means eating breakfast, lunch, and dinner.  You should also have some healthy snacks throughout the day.  Studies show that people who skip breakfast were almost 5 times more overweight than those who do not.  You may think skipping meals lowers calories.  It may actually cause you to consume more at a meal than if you were to have eating smaller portions and sizes throughout the day.  Managing portion sizes is important to avoid overeating.   Just imagine if you are served a bigger plate, you may want or feel the need to eat the whole thing.  But getting smaller portions can help you mange your hunger instead of it controlling you.

Drink More Water.  Most people don’t get enough water and fluids.  Over 73 percent of people don’t drink enough water during the day and this slows the metabolism down as well which causes you to burn fewer calories.  Strive to drink 8 glasses of water daily.

Get More Sleep.  When you don’t get enough sleep, your body triggers hormone changes that may cause you eat more.  Getting too little sleep also causes you to crave foods that are bad for you and are high in fat and sugar.  Plus if you are tired, you won’t have as much energy to workout.   Strive for at least seven or eight hours of sleep nightly.  You will definitely have more energy for high intensity workouts and weight training.

Eat More Lean Proteins and Vegetables  Eating foods that are higher in protein will help you to control your hunger.  Consuming more vegetables will also fill you up and give your body the energy it needs so you won’t crave as much junk food.   Vegetables are easier to burn off too.

Eat Food Slowly  Chewing your food slowly will help you your brain tell your taste buds what you are getting and you can actually savor the flavor.  Try chewing your food at least twenty times before swallowing.  This helps break down the food further so your body can absorb the nutrients more easily as well.

Go Easy on the Sugar  Limiting the amount of sugar you get can also decrease your calorie intake.

A good exercise program is key to controlling hunger as well as practicing a healthy lifestyle. Remember you can exercise more efficiently by doing high intensity interval training exercise programs.

Shrimp and Asparagus Salad

12 oz thin asparagus spears trimmed up

6 cups watercress with the tough stems cut off

1 16 oz bag of frozen, cooked, and peeled shrimp w/tails (thawed)

2 cups cherry tomatoes cut into halves

3/4 cup of bottled raspberry vinaigrette

Sea Salt, cracked pepper

 

How to Prepare this salad:  In a large skillet cook asparagus in small amount of lightly salted boiling water for about 2-3 minutes.  Then drain in colander and run under cold water.

Next put the asparagus in 4 servings (plates), top with watercress, shrimp, and cherry tomatoes.  Add dressing, salt and pepper to taste.  Serves 4

Each serving has 257 calories, 8 grams of fat (1 gram of sat fat)) 227mg cholesterol, 360 mg sodium, 14 grams carbohydrates, 2 grams of fiber, 33 grams of protein,

Ok, so we all have seen the reality tv show Jersey Shore.  And one of the most famous members of the cast, Snooki, is one of my favorite weight loss stories because I love Jersey Shore and the cast.    Who can forget the episode in the club where Snooki gets hit by some drunk fool.  That episode was drama.  Snooki is one drama queen who I really enjoyed watching.  I like to see positive things come from a show I enjoyed watching for so long.  Snooki seemed to have her ups and downs and finally found love with Gianni.  Did I spell that right?  I dunno, but according to her that was the motivation behind her weight loss.  She claims “She doesn’t want Gianni to ever leave her.”  Whatever the motivation was, she looks awesome.

How did she do it?

Snooki dropped almost 42 pounds.  What is her secret?

She stopped drinking and partying. Not only did she cut her calorie intake but she also does lots of cardio. Apparently she has a grueling workout routine.  And she has worked really hard for her new body. Nicole reportedly spends lots of hours in the gym and has a personal trainer.  She has a stricter, healthier diet that she also follows.  Her new fitter body has some people criticizing her on being too skinny.

Well I know there are a lot of haters out there but I must say Snooki looks beautiful.    The combination of being in love and love for herself has her looking great. You go girl.  And oh, shake them haters.  Congratulations on your weight loss.

Getting Back on Track

Ok so I was doing good for a while. I lost about 18 lbs but somehow I gained it and then some back.  So this is definitely not a good thing.  I stopped exercising for about two weeks, got sick, now it’s time to get back on track.

Some things and goals I have this week include ditching all soda and alcohol,  cardio 5 days a week minimum and at least 2/3 weight training sessions.

How I plan to stay motivated….well I decided to track other successful weight loss bloggers and their successes and motivational stories,  keep a daily food journal, and no more shopping when hungry.  No more fast foods.  I have to have at least one cheat day to reward myself for staying on track though.  I decided to post this list on the mirror where I look every so often throughout the day oh wait, snap, the frig is an even better place because I go there more often.  Well this is my update as to where I am with my weight loss journey.  I am still working at the little lifestyle changes that can add up to losing more weight and keeping it off.    Be on the lookout this week for my photos.   I am now at 174 lbs.  Yikes, I am only 5’2 so that makes me obese.  Obesity runs in my family on my dads side.  Black people love to eat a lot of fried foods and I have a big family who welcome you with food when you first walk in the door which makes it harder sometimes too.  On my Asian side who I have not met in person yet everyone is skinny.  For years I was blessed with being on this side of genetics but unfortunately after my last pregnancy, the 25 extra pounds seem to just want to hang on.   So I will keep yall updated with my progress this week.

4 Reasons to take a Before Photo

Sometimes when starting a weight loss program it may seem like you have reasons for not wanting to take your picture.  The biggest reason would be the fact you may not exactly like the way you look right now, but that is actually  the number one reason to take a before photo.

So reason number one for taking a before photo is to keep a picture of how you look and help you strive to get where you want to look and remind you of why you should change your eating habits.

Sometimes a photograph can be a reality check.  I didn’t realize how big I had become til I actually saw a picture of myself with my family in a Christmas photo.  I didn’t even recognize myself.  I asked myself is that really me and oh my god, why didn’t anyone tell me I had become ginormous.

Reason number two for taking a before photo is to have a memory of where you used to be and congratulate yourself for losing that extra weight in your after photo.

Reason number three for taking a before photo is sometimes it maybe hard to judge when you lose 10, 15, or 25 pounds.  You may not  remember what you looked like ten pounds ago and you can’t really see the improvements without a  before picture for a small amount of weight loss such as ten or fifteen pounds.

Reason number 4 for taking a before photo is that it will motivate you to eat right, burn calories, and get the best body you have been dreaming about.

Reason number 5 for taking a before photo is to see where exactly you really are in weight loss and goals.

Conclusion:

Before photos can help measure our progress in our weight loss journey.  It is a reminder of our present or past selves and we can often look back and see the success or strive for more success.

So whatever weightloss or fitness program you are going to engage in, take some before pictures so that you can measure your progress, see where you really stand and where you ‘d like to go and reflect on your weight loss accomplishments.

The alarming effects of soda on your health seem to be making headlines more and more.  What exactly are the risks of drinking soda when it comes to your health.

Well one of the major reasons you should ditch the soda is the fact that is contains a lot of sugar.  Too much sugar consumption leads to unhealthy weight gain which is a predisposition to diabetes.  Once you get diabetes, it can be difficult to manage.

The excess sugar from soda and other drinks is converted in the body to fat. Unlike the subcutaneous fat that’s seen under the skin, much of this sugar changes to triglycerides or fatty tissue that is found around the organs, like the liver. Both metabolic syndrome and fatty liver disease can lead to higher risk of coronary heart disease, Type 2 diabetes and stroke.

Ways to curb soda cravings

Some ways you can get rid of your soda cravings include drinking more water and switching to green tea.  Green tea is a healthier choice for a boost of energy and it ‘s a great antioxidant.  Next time your are craving a soda try one of these alternatives to avoid becoming another health statistic.
